Christina Ward is on a mission to save people from the myths and misinformation about food safety and food preservation.  Sure, gorgeous pictures of foods in fancy jars inspire us to try our hand at preserving but the reality is that making jams, pickles, sauerkraut, and the like requires a little science and a lot of patience. 
Christina teaches safe food preservation techniques throughout the country anywhere she can set up her tools. Her classes focus on understanding the scientific concepts, so makers are empowered to explore the art of flavor. Preservation-The Art and Science of Canning, Fermentation and Dehydration distils those classes into a definitive book that uses over 100 recipes to explain the history and science of food preservation.  
She is well-known for her down-to-earth, DIY aesthetic as well as her boundless curiosity about food history. She has written for numerous publications and always answers her phone to field questions from desperate makers across the country wanting to know why their jelly won't gel.
